Spring has arrived in full force here in Loreauville! During March we enjoyed watching the first clover blossoms emerge. Now, our lush pastures are absolutely exploding, which is providing a feast of ryegrass and clover for our livestock. Our cows are fat and healthy, which is exactly what we like to see. We've been blessed with gorgeous weather and just the right amount of moisture, and everything is growing and blossoming!

Of course, rapid pasture growth means we have to maintain our fence lines. At our ranch, we rely exclusively on electric fencing, which means that any grass or weeds that start growing on the fence could cause electrical shortages and disruptions. So every day, we ride the fence lines, check for encroaching weeds or grass, and remove them before they become a problem.

We’re also clipping pastures that were not grazed throughout the winter. We have to do this now so that we can allow our Bermuda grass, our main summer pasture forage, to flourish without competition from weeds.

We are both enjoying the gorgeous weather and planning for the hot, humid months of summer in Louisiana. Our ranching practices are guided by nature’s cycles, and we remain committed to sustainability while providing only the very best local grass fed beef.

Hayride Tour

We were also honored to host the Louisiana Women in Agriculture Conference and Expo 2024 on March 21 at the ranch! 

The group met in Alexandria then boarded a bus and headed to Loreauville. 

The weather forecast called for rain that day, but luckily we had enough time to take these wonderful people on a hay ride / tour of our ranch before the rain came.

After the tour, they enjoyed a lunch catered by Bon Creole in the Saloon (which was packed, by the way!) and had a deep Q&A session with Dr. Shannon Gonsoulin to learn more about regenerative agriculture and cattle ranching.

Over the past few months, we’ve been testing out different seasoning combinations and have finally settled on one we absolutely love. The recipe was developed by Mr. Mark Broussard of CEG Farms, and we can't wait to share this with you!

Statewide Shipping is now available!


We are now able to offer discounted shipping in the State of Louisiana. Everything on our website, including our retail cuts, can be shipped. When you’re placing orders for shipping, here’s a few things to keep in mind:

  • We package our shipments using insulated materials and ice packs, which are designed to last up to 72 hours. However, we only offer 1 and 2 day shipping.
  • Our rates include a packaging fee to cover the cost of these materials, as well as shipping rates calculated by UPS.
  • Please allow us time to fulfill your shipment. There might be a slight delay in availability of some products that we frequently run out of, but we will let you know after you place your order about how long it will take for us to prepare your order for shipment.
  • Our shipping boxes can hold up to 25 lbs (depending on the cuts). It’s a good idea to limit your online order to about 20 lbs so we can make sure everything fits. If you’d like to ship over 20 pounds, please complete another order for every 20 lb increment.
  • Our bundles are the perfect size for shipping and offer a great variety of locally sourced grass fed beef. So make sure to check those out when you’re shopping online!

Lamb Shwarma

This month, we're all about lamb! So we thought we'd feature our favorite way to cook it this month!

Ingredients:

Boneless Lamb (thinly sliced, ground, or stew meat - pick your favorite!)
Spices: Ground Paprika, Turmeric, Garlic, Onion, Black Pepper, Salt, Ginger
Lemon Juice
Olive Oil
Greek Yogurt
Red Onion
Parsley
Tahini
Suggested: shredded cabbage, cucumbers, tomatoes, harissa, mint, dill, onions

Instructions:

1. Combine spices, yogurt, olive oil and lemon juice. Add lamb and marinate for a few hours in the refrigerator-- overnight if you can.
2. In a large cast iron skillet on medium heat, heat some olive oil and then add the lamb and sauté for a couple of minutes. Lower the heat and cook the lamb for another 7-10 minutes uncovered. If there is a lot of liquid, increase the heat for the liquid to evaporate, stirring frequently. Let the lamb caramelize around the edges slightly for the best flavor! The lamb is cooked when it reaches an internal temperature of 145F degrees.
3. Turn off the heat and let it rest for about 3 minutes. Top with parsley and red onion tossed in lemon juice. 
4. Get a large plate.. Spread some tahini, then add lamb.  Then add any of your favorite toppings (we suggest shredded cabbage, cucumbers, tomatoes, harissa, mint, tahini, dill, and onions). This makes a great dish on its own, but you can also use warm pita bread or wraps to make sandwiches!
