Dr. Shannon Gonsoulin  

Shannon Gonsoulin, DVM

Owner

Dr. Shannon (Doc) Gonsoulin has always been naturally gifted with animals. He grew up around horses and successfully entered Rodeo contests to help pay for college. He met his wife, Toni, during veterinary school, and their partnership created four beautiful children and four successful veterinary clinics.

Inspired by his family’s history, Doc has made it his mission to continue the legacy of his ancestors. Doc is related to Jean Francois de Beaumelle Gonsoulin, who arrived in Southeast Louisiana from France in 1770 and first registered the F2 brand for his cattle. This connection to his family inspired Doc to create his own grass fed beef operation on his family’s land in Loreauville, LA. He proudly continues the Gonsoulin tradition, and works non-stop to ensure his family’s continued legacy.

Farm Store Manager

Earline Ransonet has been life-long friends with Shannon and Toni Gonsoulin, so her history with the Gonsoulin family predates their grassfed operation. She has been the heart and soul of the Farm Store since it first opened its doors, and continues to perform as a stalwart and invaluable member of the GLC team. 

Before then she was self-employed as a cosmetologist. Originally from Scott, Louisiana, Ms. Earline has lived in Loreauville since 1965. She is a proud mother, grandmother, and great-grandmother. Her hobbies include painting, gardening, dinner parties, camping, and nature. She is our resident expert on health and wellness, risk-management, company culture, networking, and grassfed cooking. 

Josh Mouton

Ranch Manager

Joshua Mouton is responsible for overseeing the day-to-day operations of the ranch. His role involves managing livestock, crops, equipment, and personnel. He plays a crucial role in managing resources efficiently, ensuring the well-being of livestock, maintaining the property, and achieving financial and operational objectives.

Josh graduated from Catholic High in 1999 where he played baseball. He went to school at UL in Lafayette for 2 years in engineering, then started earning money as an offshore rig worker from 2001 - 2014. Josh grew up around horses and worked part-time as a cowman for most of his life. He has so many skills and talents that he brings to his job that he is not only a natural fit as Ranch Manager, but is also the backbone of the entire operation.

Sydni B. Langlinais

Graphic Design and Social Media

Sydni Langlinais is our graphic designer and social media manager. She has been friends with Shannon and Toni Gonsoulin’s daughter, Taylor, since high school. After graduating with a degree in Graphic Design from the University of Louisiana at Lafayette in 2018, she began her own company, SB Creative.

Sydni brings a fresh perspective on trends and new media to the ranch, and helps us to use modern tools to help us connect with our audience. Like everyone else at GLC, she is an animal lover and enjoys gardening and the outdoors.

Jennie Lallande

Sales, Lafayette Farmer’s Market

Jennie has been working at GLC since 2016, but most of you recognize her from the Lafayette Farmer’s Market on Saturday mornings. She is a local food farmer with a thriving vegetable garden, and she also raises chickens and goats. Jennie has a bachelor’s degree in Environmental Geology from the University of Louisiana at Lafayette. She participates in youth and farmer outreach programs throughout Acadiana, such as the Sugarland Elementary Outdoor Garden program.

Mark helps out at the Farm Store when he isn’t busy raising sheep on his farm in New Iberia. He has spent many years working with livestock, including at the University of Louisiana Lafayette’s research facility in Cade, LA and at the Louisiana State University research facility in Jeanerette, LA.

Sid DeRouen

Sid DeRouen, PhD

Sales, Farmer’s Market, Baton Rouge

Sid Derouen, PhD earned his doctorate from Louisiana State University in Animal Science Breeding and Genetics. In 2009 he transitioned from conventional to grass fed beef production, and when he retired from LSU in 2013 joined the GLC family. Sid raises his own cattle and proudly represents GLC at the Red Stick Farmer’s market in Baton Rouge on Saturdays.

Head Butcher

Andy Thibodeaux has been cutting meat for 35 years. This passion began as a kid when he worked with his family in his grandfather’s slaughterhouse. He remembers spending his childhood watching his uncle work all day while he sat on a stool in front of a huge box fan. When he was old enough, he started working there himself. He enjoys helping customers and takes pride in knowing that he produces a product for a family to enjoy. The satisfaction of helping to feed a family is what keeps him going after 35 years.

As head butcher, Andy oversees the butchering and meat processing operations within the facility. He is responsible for managing a team of butchers and ensuring that the processing activities are carried out efficiently and in compliance with food safety and quality standards. Andy plays a critical role in ensuring the safe processing of meat products.

Natalie Guilbeaux

Processing Plant Manager

Natalie Guilbeaux was born and raised in Erath, LA. She has been married to her loving husband Shane for almost 20 years. They have three beautiful children—2 sons (18 & 8) and a daughter (6). Her family loves animals. They have 2 horses and 4 dogs. They also raise rabbits and show hogs in 4H. In their free time the Guilbeaux family enjoys camping, spending time outdoors, fishing, and watching movies. Natalie is employed by GLC processing as a meat packer and has over 2 years of experience in the slaughterhouse industry.

Amelia Cronan

Amelia (Mimi) Cronan

Marketing and Technology

Mimi has been at GLC since 2019 when she helped build our online store. Since then she has continued to bridge the gap between traditional farming practices and modern technology. Mimi graduated with a degree in Political Science and German from Loyola University New Orleans in 2003, and went on to earn a Master’s degree in Political Science from the University of Washington in Seattle in 2009. In 2017 she took classes at the University of Louisiana at Lafayette in computer science and electrical engineering. She brings a variety of diverse skills to GLC, such as fixing our computers, maintaining our website, writing our newsletter, managing our email lists, and making videos.
