The new year is in full swing, and whether you set big resolutions or just small intentions, February is a great time to check in on the goals that matter most—better health, stronger families, and a deeper connection to the food we eat. Here at Gonsoulin Land and Cattle, we believe that true wellness starts from the ground up, beginning with healthy soil that nourishes our pastures, our cattle, and ultimately, our community.

Well, we’ve made it through the great snowfall of 2025. Despite our best efforts to prevent frozen pipes, the bitter 3° weather got the best of us, but we were fortunate to only need to repair one main line. The cattle, however, have weathered the storm surprisingly well.
We began supplementing their regular hay with high-quality alfalfa and peanut hay about a week before the storm to ensure they had the proper nutrition. Winter nutrition is critical, especially during high-stress events like this past storm. On the pasture side, the ryegrass is coming up just as we’d hoped. We’re gearing up to apply our first round of fertilization within the next week or two, aiming for optimal grazing by the end of February.

Unfortunately, we had to shut down the plant again due to a boil water advisory in Vermilion Parish. This has set us back on custom beef production, but it's just part of the process. We’re grateful to have such understanding customers as we navigate these challenges.

Winter’s still hanging on, but we’ve got plenty of fresh, seasonal vegetables to keep your kitchen stocked. Vendor Spotlight: Mr. Errol Greig & Bayou Teche Pecan Company


A good pecan is a staple in any South Louisiana kitchen, and nobody knows that better than Mr. Errol Greig of Bayou Teche Pecan Company. For years, he’s been harvesting and shelling some of the finest pecans in Acadiana!

In addition to pecans, he also offers handmade wooden items as well as satsumas and satsuma juice (a Mardi Gras favorite)!

In February, we’re taking a deep dive into one of the most important nutrients for optimal health: omega-3 fatty acids. You’ve probably heard of them, but understanding exactly what omega-3s are and how they benefit your body can help you make more informed choices about what you eat—especially when it comes to nutrient-dense foods like grassfed beef.

Omega-3 Fatty Acids

Omega-3 fatty acids are essential fats that your body needs but can’t produce on its own, meaning you have to get them from food. They play a crucial role in brain function, heart health, and reducing inflammation.

To dig a little deeper, Omega-3 fatty acids are a type of polyunsaturated fat, which means they have more than one double bond in their chemical structure. The "omega-3" designation comes from the position of the first double bond, which occurs three carbon atoms from the end of the molecule.

Types of Omega-3 fatty acids

  • ALA (Alpha-linolenic acid): Found in plant sources like flaxseeds, chia seeds, and walnuts, ALA is a short-chain omega-3 fatty acid. The body can convert ALA into two other important omega-3s, EPA and DHA, but this conversion is limited and inefficient.
  • EPA (Eicosapentaenoic acid): Found mainly in fish and seafood, EPA is a long-chain omega-3 that plays a key role in reducing inflammation and supporting heart health.
  • DHA (Docosahexaenoic acid): Another long-chain omega-3 that is particularly important for brain health. It makes up a large portion of the brain's structure and is vital for cognitive function, mood regulation, and eye health.

Omega-3 fatty acids in the Body

  1. Anti-inflammatory: Omega-3 fatty acids help produce eicosanoids, signaling molecules that regulate inflammation. These molecules help reduce the body’s production of pro-inflammatory compounds, which can lower the risk of chronic diseases such as heart disease, arthritis, and even some cancers. 
  2. Heart Health: Omega-3s are known for their ability to reduce triglycerides, lower blood pressure, and improve the function of the endothelium (the lining of blood vessels). This leads to a lower risk of cardiovascular disease. DHA and EPA have also been shown to help prevent the formation of blood clots, which can reduce the risk of heart attack or stroke.
  3. Brain Function & Mental Health: DHA is a major structural component of the brain, making up about 30% of the fatty acids in the brain’s gray matter. It plays a key role in maintaining cognitive function, memory, and mood stability. Low levels of DHA have been linked to conditions like depression, anxiety, and even Alzheimer's disease.
  4. Support for Healthy Pregnancy and Early Development: Omega-3s, especially DHA, are critical for fetal brain development. Consuming adequate amounts of omega-3s during pregnancy has been linked to better developmental outcomes, including improved cognitive abilities in children.

Grassfed Beef and Omega-3s

You may already know that fish is often touted as one of the best sources of omega-3s, but did you know that grassfed beef can also be a great source of these essential fatty acids? The reason for this is simple: the diet of the cattle. Grassfed cows eat a diet primarily made up of grass and other forages, which are naturally rich in omega-3s. In contrast, grain-fed cows, which are typically fed corn or soy, have a much lower omega-3 content in their meat.

Grassfed beef contains higher levels of both EPA and DHA, making it an excellent option for those looking to boost their omega-3 intake without relying solely on fish. It’s also a more sustainable choice, as grassfed beef is typically produced using regenerative farming practices that are better for the land, animals, and the environment.

Omega-3 fatty acids are essential for a wide variety of bodily functions, from reducing inflammation and supporting heart health to maintaining cognitive function and mental clarity. While ALA from plant sources can be beneficial, EPA and DHA from animal sources—especially grassfed beef—offer the most bioavailable forms of omega-3s, meaning your body can use them more efficiently.

Primal Beef Egg Rolls


Ingredients

1 lb primal beef blend
½ cup diced carrots
½ cup diced onions
1 tbsp minced ginger
2 cloves garlic, minced
2 tbsp soy sauce (or coconut aminos for a lighter option)
1 tsp sesame oil
½ tsp black pepper
1 cup shredded cabbage (optional, but adds great texture)
1 package egg roll wrappers
1 egg, beaten (for sealing)
Oil for frying (tallow, avocado, or coconut oil recommended)

Instructions

1. Prepare the Stuffing

  1. Heat a skillet over medium-high heat. Add the primal beef blend and cook until browned, breaking it up as it cooks.
  2. Stir in the diced carrots, onions, ginger, and garlic. Cook for another 3–4 minutes until the vegetables soften.
  3. Add soy sauce, sesame oil, and black pepper. Stir well and cook for another minute. Remove from heat and let it cool slightly.

2. Assemble the Egg Rolls

  1. Lay an egg roll wrapper on a clean surface with one corner pointing toward you (like a diamond).
  2. Spoon about 2 tablespoons of the beef mixture onto the center of the wrapper.
    Fold the bottom corner up over the filling, then fold in the sides, and roll it up tightly.
  3. Brush the top corner with beaten egg to seal. Repeat with remaining wrappers and filling.

3. Cook the Egg Rolls

To Fry Heat about 1½ inches of oil in a deep skillet or pot to 350°F.
Fry a few egg rolls at a time, turning occasionally, until golden brown and crispy (about 3–4 minutes). Remove and drain on paper towels.

To Bake Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly spray with oil.  Brush or spray each egg roll lightly with oil to help them crisp up. Bake for 18–20 minutes, flipping halfway through, until golden brown and crispy.

To Air Fry Preheat air fryer to 375°F. Lightly spray the egg rolls with oil. Arrange in a single layer in the air fryer basket, making sure they aren’t touching. Air fry for 8–10 minutes, flipping halfway, until crisp and golden brown.

Let cool for a minute before serving—then enjoy!

Here’s a simple and flavorful Sriracha-Hoisin Dipping Sauce to pair with your Primal Beef Egg Rolls. This sauce is a little sweet, a little spicy, and packed with umami flavor—perfect for those crispy beef egg rolls. 

Ingredients


3 tbsp hoisin sauce
1 tbsp sriracha (adjust to taste)
1 tbsp soy sauce (or coconut aminos)
1 tsp rice vinegar or lime juice
1 tsp sesame oil
1 tbsp water (to thin, if needed)
½ tsp minced garlic (optional)
½ tsp minced ginger (optional)
½ tsp honey (optional, for a touch of sweetness)

Instructions

  1. Whisk all ingredients together in a small bowl until smooth.
  2. Taste and adjust spice or sweetness as needed.
  3. Serve alongside your egg rolls for dipping!
