We’re finally getting a break from summer's extreme heat as we move into October, and we couldn’t be more grateful for Nature’s mercy. Unlike last year, we have had an abundance of late summer rains and our pastures are rich and lush as we prepare for cooler temperatures.

We have begun the process of strip grazing our cattle. Strip grazing involves using portable fence lines to provide a new strip of pasture to our cattle each day. This method allows our animals to graze on fresh grass daily. Strip grazing improves the health of the soil, pastures and the animals as well. Our livestock are allowed to graze more evenly across pastures, which reduces overgrazing while providing organic matter into the soil through manure. Rotating our animals in this way also allows sections of pasture to rest, which leads to increased forage yields and quality over time. The animals get a consistently balanced diet rich in essential proteins, vitamins, and nutrients.

Strip grazing is a more sustainable approach compared to the time-consuming process of baling and distributing hay as feed.

This year we are blessed to have more pastures than normal to strip graze, meaning we are in a very good position leading into the winter months. As the temperatures drop, grass begins to stop growing in preparation for eventually dying off. Strip grazing will also help us control any vegetation growing along the fence lines. It is much easier to control in the fall in the winter time because grass does not grow very tall along the fence lines. We also have ample hay supplies in the barn already, so we’re ahead of the curve on that front.

This preparation and our grazing techniques ensure that our cattle are well-nourished and our pastures remain healthy, exemplifying the harmonious relationship between the soil, the pastures, the animals, and the food we produce.

Yellow Curry with Lamb


Ingredients:

2 tbsp tallow or ghee
2 tbsp olive oil
1.5 lb GLC Lamb Stew Meat (or Beef, if preferred)
4 oz yellow curry paste
6 carrots, peeled and sliced
2 yellow onions, finely chopped
6 cloves garlic, minced
3 tbsp fresh ginger, minced
1 green bell pepper, finally chopped
1 pineapple cut into cubes
2 tbsp turmeric
1 cup broth (bone, chicken, veggie)
1 can (16 oz) pumpkin puree
2 cans (16 oz each) coconut milk

salt and pepper to taste
cooked jasmine rice


Instructions:

1. In a cast iron skillet, melt oil/ fat. Add curry paste to skillet and fry lightly for 5 minutes.
2. Add onions, garlic, ginger, carrots, bell pepper. Cook on medium heat until onions are transparent, about 10 minutes.
3. Add meat and lightly sear. When the meat is a nice brown color, add your broth. Allow this mixture to cook on low heat for about 20 minutes.
4. Add pumpkin puree, turmeric, pineapple, and coconut milk. Cover and cook on low heat for 30 minutes.
5. Add salt and pepper to taste and serve with jasmine rice.
